Crispy Baked Caesar Chicken

Crispy golden brown chicken with the flavours of caesar salad dressing!

ingredients
  • 2 cups breadcrumbs* (gluten-free for gluten-free)
  • 1/4 cup parmigiano reggiano (parmesan cheese), grated
  • 1 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 pinch cayenne (optional)
  • 1/2 cup caesar dressing (link)
  • 1 pound boneless and skinless chicken breasts or thighs, pounded thin
directions
  1. Mix the breadcrumbs, parmesan, oregano, onion powder, garlic powder and cayenne and place in a wide bowl.
  2. Place the dressing in a large bowl, dip the chicken into the dressing, shake off the excess, and press it into the breadcrumbs to coat on all sides, before placing on a rack on a baking pan.
  3. Optionally spray the chicken with oil.
  4. Bake in a preheated 425F/220C until golden brown and cooked (165F), about 25 minutes.

Option: *Use plain breadcrumbs, seasoned breadcrumbs, panko breadcrumbs, or better yet: caesar croutons, processed into crumbs.
Option: Feel free to fry in oil!

A tasty caesar salad with crispy chicken!

ingredients
  • 1 pound crispy baked chicken, cut into bite sized pieces (optionally warmed)
  • 8 cups romaine lettuce, sliced
  • 1 cup croutons (gluten-free for gluten-free)
  • 1/2 cup caesar dressing (link)
  • 1/4 cup parmigiano reggiano (parmesan cheese), grated or shredded
  • pepper to taste
  • 1/2 lemon, sliced
directions
  1. Assemble the salad, toss, and enjoy!

Option: Add bacon!
Option: Add sundried tomatoes, sliced.
Option: Add more vegetables such as cucumbers, peppers, tomatoes, avocados, etc.
