Cheesy Ground Chicken Fajita Pasta

All of the flavours of chicken fajitas in a simple and tasty pasta that’s cooked in one pan and topped with plenty of melted cheese!
ingredients
- 1 tablespoon oil
- 1 pound ground chicken (or turkey, or beef)
- 1 onion, sliced or diced
- 1 green bell pepper, sliced or diced
- 1 red bell pepper, sliced or diced
- 1 yellow bell pepper, sliced or diced
- 3 cloves garlic, chopped
- 2 tablespoons taco seasoning (link)
- 2 1/2 cups chicken broth (link)
- 1 (15 ounce) can diced tomatoes
- 8 ounces pasta (gluten-free for gluten-free)
- 1/2 cup sour cream (or greek yogurt or heavy cream) (optional)
- 2 cup cheddar cheese (or monetary jack), shredded
- 2 tablespoons cilantro, chopped
directions
- Heat the oil in a large pan over medium heat, add the chicken and cook, breaking it apart as it cooks, about 10 minutes.
- Add the onion and bell peppers and cook until tender, about 10 minutes.
- Add the garlic and taco seasoning and cook until fragrant, about a minute.
- Add the broth, tomatoes, and pasta, bring to a boil, reduce the heat and simmer until the pasta is tender, about 8-10 minutes.
- Mix in the sour cream and half of the cheese and let it melt into the sauce.
- Sprinkle on the remaining cheese and let it melt. (Throw on a lid and let it cook for 2-3 minutes or throw it under the broiler.)
Option: Add 1 jalapeno pepper, dice, along with the bell peppers.
Option: Add 1 poblano pepper, dice, along with the bell peppers.
Option: Replace the diced tomatoes with 2 cups of salsa.
