Creamy Chicken Tortilla Soup

A warming Chick-fil-A inspired creamy chicken tortilla soup!
ingredients
- 1 tablespoon oil
- 1 cup onion, diced
- 1 cup red bell pepper, diced
- 4 cloves garlic, chopped
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 4 cups chicken broth
- 2 (14.5 ounce) cans pinto beans, rinsed and drained
- 1 (14.5 ounce) can black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes
- 1 (4 ounce) can diced green chilies
- 2 tablespoons masa harina (corn flour) (or flour or omit)
- 1 pound boneless and skinless chicken breasts or thighs
- 1 teaspoon oregano
- 1 cup corn (fresh, or thawed frozen, or drained canned)
- 1/2 cup soup cream
- 1 tablespoon lime juice (or lemon juice)
- 2 tablespoons cilantro, chopped
- salt and pepper to taste
directions
- Heat the oil in a large saucepan over medium heat, add the onion and bell pepper and cook until tender, about 5 minutes.
- Add the garlic, cumin and paprika and cook until fragrant, about a minute.
- Add the broth, beans, tomatoes, diced green chilies, masa harina, chicken, and oregano, bring to a boil, reduce the heat and simmer until the chicken is cooked through, about 20-30 minutes.
- Remove the chicken and shred before returning to the soup along with the corn, and sour cream.
- Add the lime juice and cilantro and season with salt and pepper to taste before enjoying with tortillas chips!
Option: Add 4 strips of bacon, cooked and crumbled.
Option: Puree some of the beans in broth to thicken soup more!
