Chicken Stroganoff – Closet Cooking

A quick and easy chicken stroganoff with mushrooms, paprika, dill, and sour cream!

Normally when I think about stroganoff I think about beef but chicken also works really well! Stroganoff is a dish where the meat is in a sauce made with onions, mushrooms, paprika, mustard and sour cream and it’s often served over egg noodles. I like to add garlic, thyme, worcestershire sauce, soy sauce, and dill to the seasoning! This dish is super simple to make, so it’s perfect for busy work nights and you can easily cook the egg noodles in the time that it takes to make the stroganoff, or you can even cook the noodles in the same pot with the sauce!

A quick and easy chicken stroganoff with mushrooms, paprika, dill, and sour cream!

ingredients
  • 1 tablespoon oil (or butter)
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
  • 1 onion, diced or sliced
  • 8 ounces mushrooms, quartered or sliced
  • 2 cloves garlic, chopped
  • 2 teaspoons thyme, chopped (or 1 teaspoon dry thyme)
  • 1 tablespoon paprika
  • 1 cup chicken broth (or beef or water)
  • 1 tablespoon dijon mustard
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons dried dill (optional)
  • 1/2 cup sour cream
  • salt and pepper to taste
directions
  1. Heat the oil in a large skillet over medium-high heat, add the chicken and cook, about 5-8 minutes, before setting aside.
  2. Add the onion and mushrooms and cook until tender, about 7-10 minutes.
  3. Add the garlic, thyme, and paprika, and cook until fragrant, about a minute.
  4. Add the broth, mustard, worcestershire sauce, soy sauce, and chicken, mix well, bring to a boil, reduce the heat and simmer until the sauce thickens a bit, about 5 minutes.
  5. Turn off the heat, mix in the sour cream and dill and season with salt and pepper to taste before enjoying!

Option: Add 1 tablespoon tomato paste along with garlic.
Option: Serve over egg noodles, pasta, rice, etc.
Option: One-pan: Add 2 cups of broth and 8 ounces of egg noodles, and simmer for 8 minutes!
